Good observations. I'm certain that few guitarists out there agree with this list. I sure didn't. I agree with some in the Top 10, just based on their impact. But style rules the day with Rolling Stone--you nailed the main reason with that one.

to pick up on the last point: the guitar is associated with the old white male and, really, there is nothing less cool in the world right now than the old white male. I think this is one of the big problems the guitar industry faces. they are now uncool and even associated with the social asshole.

Very true. I do think that guitar is somewhat "cool" and probably always will be to the general public. It just isn't "that" cool anymore.
I think a big reason is there is so much emphasis on copying the "rock" masters. Probably worth pointing out that most of these guys sort of fought against the norm, not roll with it. They were hated by the grandparents and such for "ruining" music. Now there is this sort of "historic' preservation thing happening. Until someone influential disturbs that new norm, guitar just won't mean much to many people anymore.
But I do find it annoying that we're all chasing that old "plexi" sound. Or the Mark IIC sound, or Vox AC30 sound....or we have a million variations of the Strat now from all the boutique dealers, it will probably shift one day to them all making Les Paul copies, then back again.
If you were a kid, is there anything more lame than chasing the old guy sound? It even annoys me.

Had to update that last section a bit....this list actually hasn't changed really in the last 30 to 40 years.....I never had a chance, haha.
